Which famous bride wore a dress that required 25 yards of silk taffeta, 100 yards of silk net, 125-year old rose point lace purchased from a museum, and thousands of tiny pearls requiring 36 seamstresses and six weeks to construct?

Well-Fed } Stout + Steak + Sharp Cheddar

Guinness Stout And Filet Mignon Chili
serves 12 to 15

Ingredients
1/2 butter
5 lb ground sirloin
1 lb filet mignon, 1/4-inch dice
2 cups onion, 1/4-inch dice
1 chile pepper, seeds removed, 1/8-inch dice
1/2 cup Guinness Stout
1/4 cup flour
2 cups crushed tomatoes
1/4 cup tomato paste
2 cups beef stock
2 cups cooked black beans
1/2 cup chili powder
3 tablespoon dark brown sugar
1 tablespoon kosher salt
2 teaspoons ground white pepper
1 teaspoon ground cumin

Directions
In a large pot or Dutch oven over high heat melt the butter and add the diced filet.  Cook until the meat is seared and brown at the edges.

Remove the filet. Add the sirloin and cook thoroughly. When fully cooked, remove and set aside. Drain off about 3/4 of the fat and leave the rest in the pan. Add onions and chile pepper. Cook until soft, about 3 minutes. Return meat to the pan and add the stout. Let boil for 1 minute. Add flour and stir constantly for 1 minute. Add crushed tomatoes, tomato paste and beef stock.

Reduce heat to low and add beans, Chile powder, cumin, salt, pepper and sugar. Allow chili to simmer for at least 30 minutes.

Garnish with freshly shredded sharp cheddar cheese, sour cream, and cilantro.

* This recipe is adapted from Gallagher's New York Guinness Stout and Filet Mignon recipe. Some of our adjustments...We used 2 cans of black beans instead of the kidney beans. The original recipe called for 1 stick of butter and we used half (the result was still rich and delicious). We did use Guinness as the recipe calls for, but any local or micro-brewed stout will work just as well. We used only 2 cans of beef stock as we wanted our stew to be heartier and less soupy. And, finally, we added a dash more sugar (the original recipe called for only 2 tablespoons).
